Day 2: 30 Days of Blogging

DAY 2: FOOD

This photo thing is hard. Not only do I have to remember to blog, I have to remember to TAKE the photo. The two don't always happen at the same time.

I didn't actually take a photo of today's subject, but I did find one on the internet so hopefully that isn't cheating :/


These are what I call "Egg Muffins" and they have become a new favorite thing of mine. I love to eat a "good" breakfast - something slightly more interesting than cereal and more healthy than pancakes and sausage. In general I love eggs/omelettes with all the fixings in them, but who has time to make all that in the morning? Not me. Until TravelBuddy shared this recipe with me. 

First, you make your own "better for you" sausage with ground turkey and seasonings. I didn't do all the steps the recipe says to do - I just browned the meat and cooked in the seasonings. I also made a double batch of the meat and froze some for later.

Then add your fixings - I chose spinach, red bell pepper and zucchini - mix with cheese and beaten eggs and pour into a GREASED muffin tin and bake. Easy peasy!

I keep them in the fridge and reheat 2 at a time in the microwave and eat with toast. A quick and easy, hearty and healthy breakfast.
